Salva Cremasco Formaggio molle da tavola, a pasta cruda, prodotto esclusivamente con latte di vacca intero, crudo o pastorizzato, a crosta lavata, con stagionatura minima di 75 giorni.

La pâte est blanche ou jaune paille, de consistance compacte et friable voire un peu farineuse, plus molle proche de la croûte.
Le mot cremasco signifie crémeux, en référence à la pâte molle du fromage.

It has a minimum maturing period of 75 days, during which time its rind is periodically washed.
The paste has a pleasant, intense flavour that becomes stronger as it becomes more mature.
The flavour of ‘Salva Cremasco’ PDO cheese is closely linked to the maturing process; it is not very salty and it has a slightly bitter taste reminiscent of green grass, in particular near the rind.
The intense, clear-cut but nevertheless delicate aroma is mainly reminiscent of citrus fruit and melted butter, with a hint of sour milk.
Indeed, the flavour becomes progressively more aromatic and intense and the colour changes gradually from white to straw yellow.
Raw materials (for processed products only): ‘Salva Cremasco’ PDO cheese is produced using whole, raw cow's milk from the cattle breeds reared in the area concerned, namely Frisona Italiana and Bruna Alpina.
