# Formagium — Index Caseorum Mundi

> A structured database of the world's cheeses: 4957 cheeses, each with its technical specification — milk, milk
> treatment, paste, rind, style, pressed-curd cooking, ageing, fat, weight, certifications (PDO, PGI, TSG, AOC), country,
> region and province — from official and open sources, every value with its source. Italian at https://www.formagium.com/, English at
> https://www.formagium.com/en/.

Sources, in the order that wins when they disagree: the official specification (the EU eAmbrosia register and each
PDO/PGI's documents, quoted; US 21 CFR Part 133 standards of identity), then composition tables (ANSES CIQUAL 2020), then
the cheese infoboxes of eight Wikipedias (CC BY-SA 4.0), then Wikidata (CC0), last cheese.com (its facts only — milk,
type, rind, flavour, aroma, texture, colour, family — where no other source speaks). Nothing is estimated: a value no
source gives is empty.
